Snow Day with Banana Pancakes

The other day, I had a snow day.

I totally slept in.
Not only that, but I made banana pancakes for breakfast, and I ate them all up with, like, five cups of coffee in my warm, snow day belly.

It was awesome.

The photo above makes it look like there's a big piece of butter underneath the mapley banana slice, it's not, it's more banana. Promise. I don't eat butter by the spoonful you know, geeeez...
Okay, I confess.

I would eat butter by the spoonful if it was melted down with some sugar and cooked on the stovetop until it got good and thick and turned into caramel.

True. 

And while I'm in the confessing mood, I think it's time you know the following things about me:

1. This September, I'm going to turn thirty. Amazing.

2. I'm totally afraid of spiders even though I want to say I'm not.  

3. I didn't even make these snow-day pancakes from scratch. I cheated using a gluten-free pancake mix from Bob's Red Mill that I had left over from brunch with a gluten-free friend. So quick and so good.

Whatever. You should do the same thing, these hot cakes were de-lish-us.

Just put some cinnamon in the pancake batter, slice up some bananas, and when they're all cooked up, smother 'em all in maple syrup. If you want to make them on your own, good for you, follow this recipe.

This could be the perfect Sunday morning ritual-- Banana pancakes, coffee, and a trashy vampire novel for book club with girlfriends.

Life is delicious, isn't it?

  4. see I would write a comment here, but instead i need to measure out some flour and make some pancakes because it's tuesday and i want it to be the weekend and I want there to be pancakes... yours look sooooooo delicious

  5. @Denise- Making the best of things is a conscious effort for me. I know some people that do it naturally, where I can be quite cynical if I let myself. Snow days are easy reasons to keep it positive. :)

    @Aracne- It's funny, I didn't even realize I have been on a breakfast kick until you pointed it out. There's something about slow mornings that set the day up nicely.

    @Shahms- Touché. Maybe everyday should be a weekend?

    @Salty-I like your way of thinking. We should start a breakfast revolution. Pancakes for everyone!

  7. Awesome! I love the first photo where the maple syrup is all golden. I practically eat butter by the spoonful (I spread it on bread!) And I totally chow on pancakes and waffles all winter long. I always put something healthy in them, like coconut oil or ground flax seed so I can fool myself into thinking it's ok!
