The Weekend

You know what I love more than Mondays?

Sundays.

And Saturday's too. I guess that goes without saying for most people, but... I kinda' had to get that out.
Waaaayyyy out. Because lately, I've been feeling like I need just one more day during the weekend.

That's not asking too much, is it?
I spent a good part of this past weekend outdoors. Saturday, T. and I met some friends at Naomi's for a crafty springtime celebration. 

There were goats there. 

Chickens too. Adorable ones, that were even bigger than my little gals that seem to be growing like crazy.
Who knew those little chicks could make so much noise. It's like living with little baby howler monkeys.  

Except fluffier.
I also had a chance to get to farmers market this weekend and found the most adorable little baby beets. They were the color of easter eggs and tasted sweet and earthy. I roasted 'em up, tossed them with olive oil and lemon juice, and made them into a springtime panzanella salad with day old bread, spicy micro greens, hazelnuts, and goat cheese. 

Delish.
This coming weekend, I'll be making a cake. 

I haven't decided which one yet, but it's for a birthday. My father-in-law's birthday. He's a pretty cool guy, so it's gotta be good. I'm thinking something with chocolate, just for kicks. 

But we'll see...

And this time, I get that extra day, making it 1...2...3 days off in a row. 

Oh, the possibilities.

  1. Those beets are so beautiful and the salad sounds amazing! There's just something about the sound of chocolate birthday cake that's sooooo appealing.

  3. @Nicole- I ended up making a thick chocolate cake and served it up with fresh whipped cream. So smooth, so rich. Talk about appealing!

    @Denise- The goat grazing especially :) Those guys are darling!
